Brewing is a labor of love at Michigan’s Speciation Artisan Ales — not only are Mitch and Whitney Ermatinger a husband-and-wife brewing duo, but their prized creations also take years to perfect!

These fermentation specialists are new to Tavour, but they are here to win your heart because they crafted today's Abiogenesis Sour Ale with a mouthwatering two pounds of passionfruit AND strawberry puree per gallon!

Speciation has been gaining fans left and right in the Midwest since opening in 2016 with their experimental, time-consuming creations. Their expertise shines through with a medal at the World Beer Cup and a whopping 4.15 brewery rating on Untappd — that’s higher than Jester King and Scratch!

But unless you happen to be a member of Speciation's hyper-exclusive bottle club, the only chance to get your hands on this massive 4.33 UT-rated brew is right here. That's because Abiogenesis was brewed exclusively for Tavour and all of our Sour-sippin' members! 

This high rating exemplifies Abiogenesis’s extensive brewing process that went on for over two years! After aging the fruit puree and Golden Sour base in Oak Foeders for a few months, the brewers opened the foeders, removed some of the Ale, and topped the mix off with fresh wort. This fractional blending process keeps the mix alive and fermenting while adding nuance.

The result of Speciation’s patience is a heartbreaking masterpiece. It’s crisp, effervescent, and endlessly complex...oh and did I mention sour as hell?!

Pop the top, and let the aromas of freshly-picked strawberries greet your nose from the vivid orange pour. The first sip is awash in a fruity, mouth-puckering tartness, while juicy, passionfruit sweetness makes itself known in the middle. Smoothness from the oak-aging appears on the finish, making the 6.3% ABV wash away with a funky punch.

After sharing this in oak foeders for a few months, they opened them up, removed singees of the ale and added some fresh wort to the mix... this is known as "fractional blending"...a process that keeps the blend alive and fermenting while adding nuance! The end result was crisp...effervescent... and sour as hell! Holy God!...a vivid orange pour and fresh strawberry aromatics... but mother of God that is sour!... that's like pure carbonated lemon juice! I really love that but I just couldn't drink alot of it lol that is by far the most powerful sour I've ever encountered! I'd love to rank this higher because I appreciate the craft... but I couldn't drink alot of this lol 2/5 stars ⭐⭐
