A Note on This Beer
To create today’s Brutus Saison, the brewers at Fonta Flora scoured the North Carolina countryside in search of its delicious main ingredient: locally foraged dandelions!
Dandelions have actually been used to flavor beer since at least the Middle Ages, and dandelion-infused Saisons were once a common springtime treat in Belgium. The flowers add a spicy, herbaceous flavor, with subtle citrus notes and a mellow, earthy undertone.
Those flavors beautifully complement the tangy, wild notes in Fonta Flora’s base beer — a blend of foeder-fermented and barrel-aged Saisons, along with a portion of the brewery’s 1.5-year-old spontaneously fermented Ale for extra barnyard funk.
After the brew rests on a pile of dandelions hand-picked by the brewers themselves, it’s naturally bottle conditioned with brettanomyces for effervescent carbonation.
We only have 14 cases of this rustic Saison to go around. If you manage to snag a bottle, you might actually appreciate all the dandelions that pop up in your yard this spring!
