About This Beer
Elder Pine started working toward this complex and super limited Gueuze-style Wild Ale in 2018. Just after they opened their new brewhouse, the crew began the first batch of sour, oak-aged beer that would form a part of this blend.
In early 2022, they mixed three beers from their Wild Ale program — including that barnyardy three-year vintage. A fruity, two-year Brett Saison and a super-sour one-year brew joined it to become Compendium.
Elder Pine allowed this delightfully multifaceted sipper to mingle in oak for a few more months before bottle conditioning it for naturally effervescent carbonation.
Tasting Notes
Each mildly tart swig of Compendium is marked by terroir and time. Fruity nuances alluding to pear, apricot, and passion fruit balance the hay-like funk before leading into a crisp, dry finish.
