For Coolship Lager, the brewers used a double decoction mashing process to really develop a deep, bready character. Imported Noble Hops add touches floral flourishes and a hint of bitterness on the finish. In an unexpected twist, they rested the brew briefly in their coolship, giving it body, depth, and a slightly earthy complexity. Finally, they fermented it in open tanks with a classic Czech Lager yeast before conditioning the beer in their cellar for several months.
