A Note on This Beer
When the headbangin’ members of the Metalcore band Zao rocked Michigan during their 2019 tour, they met the spontaneous fermentation specialists at Speciation Artisan Ales.
These brewers may have a penchant for aging Wild Ales with quiet patience, but they’re also some serious metalheads!
They jumped at the chance to celebrate Zao’s forthcoming album, “The Crimson Corridor” by brewing this Gin barrel-aged Wild Ale in tribute. And, here’s the real kicker — Tavour is the only place you can get it outside of Michigan.
To make Croatoan, the brewers blended two Gin barrel-aged ales back in 2019. Having spent nearly two years conditioning in the bottle, it’s now a complex sipper full of thrashin’ flavors. On the palate, sweet notes of vanilla harmonize with nuances of juniper berries and tart, Montmorency cherries. A smooth current of charred oak carries the rhythm before nuances of zesty wild funk close out the show.
If you’re a huge fan of Zao, you’ll need this brew to sip on while you’re playing through the band’s new album.
