And today, we’ve got the only bottles of Foeder Saison - DH Apricot that left Wisconsin!
To craft this beautifully nuanced ale, the brewers started with a blend of mixed-culture Saisons that were fermented in French Oak foeders. Then, they fermented the blend a second time on 3 pounds per gallon of fresh apricots and dry-hopped it with Rakau Hops.
It opens up with the soft, subdued aromas of apricot and oak. A lip-puckering tartness coats your tongue as you sip it, followed by waves of funk rising up on the finish. It’s tangy, juicy, and crushable, making it an ideal companion for outdoor adventures.
