Gathering Blueberries and Shiro Plums

The award-winning Brooklyn team began this edition by carbonically macerating bushels of blueberries and shiro plums. The technique uses the produce’s own natural sugars and the wild yeasts to ferment it from the inside out. Once the fruit was ready, they blended and refermented it with barrels of Aged Sour Ale before finally bottle conditioning the brew.
