A Note on This Beer

Varietal Beer Co. set out with two simple goals when they opened their doors in 2018: craft high-quality beer with local ingredients and create a community space for locals.

And in 2019, their multiple Gold Medal wins at the Washington Beer Awards and Sip Magazine’s Best of the Northwest Awards solidified Varietal not just as a local favorite, but as a regional powerhouse!

Now, these craft superstars are celebrating their two-year anniversary in the best way possible — with a big, boozy beer that shows off their brewing prowess. Today’s Ghosts of Giants is a highly limited Imperial Stout that packs a 10.8% ABV and a whole lotta deep, flavorful complexity. 

Appropriately for an anniversary Stout, the Varietal team began with a selection of Barrel-Aged Imperial Stouts from different vintages in their cellar. Then, they blended them into this immensely complex super-brew.

Big wafts of bittersweet mocha greet you on the nose, paving the way for dark chocolate roast and notes of toffee bourbon on the tongue. Whispers of oak and blackstrap molasses round out the finish. 

With all the warmth swirling in this brew, we recommend saving this bottle for a cool evening. We do recommend an evening without an early bedtime though — this beast of Dark deliciousness begs to be savored for hours.

He said: Smooth! She said: Got a lil sour scent on the nose, but the beer is smooth. Lingers on the tongue with that raisin, coffee, cocoa kind of vibe but not too complex.

Smooth chocolate/coffee with subtle hints of barrel taste. Very well made to hide the high ABV it boasts. Creamy mouthfeel across the tounge, and easy to drink. Flavor fades quickly, but the warmth stays with you. Great beer!

Kick of chocolate and coffee, with a little after tingly on the tongue. Has a very strong and heavy taste.

Chocolate nodes are definitely there and it is a smooth stout. Love the artwork, one of the main reasons I bought this beer. Enjoyable but falls a tiny bit flat on the nodes with a standout taste.

Aroma shows dark chocolate, roast and soft bourbon. The flavor has chocolate, roasted barley, and caramel. Higher carbonation then normal. It is good but was expecting more.

This powerful barrel aged imperial stout runs 10.8% and pours with a roasty toasted marshmallow head with waves of bitter sweet toffee aromas washing over the senses! This "ghost of giants", so aptly named, is a blend of several premium stouts; then barrel aged and served as varietal beer co's anniversary edition limited release. Heavy notes of dark chocolate, bourbon toffee and black strap molasses... oaky warmth on the palate and silky smooth. This one leans into the astringent bourbon aspect more than many imperial barrel aged stouts which finishes earthy and slightly medicinal. However that can be a welcome change in contrast to the usual boozy/syrupy sweet side craft imperials most commonly impart. All in- this one is pleasing and relaxing in a robe and slippers on a chilly, damp November night! Cheers to my connoisseurs! 😃🍻👍 💎💎💎💍💍
