About This Beer

For their 9th anniversary, the Stout Masters at Martin House honored the heritage of one of Japanese lores' most lucky omens: the many eyed Oxen Hakutaku. And since it was the 9th year, they leaned heavily into the number as inspiration for their process: the sake yeast is called “Sake #9”, and they brewed 90 barrels of Hakutaku in 3 batches with 3 separate mashes per batch. For a total of – you guessed it – 9 different mashes.


Tasting Notes

Hakutaku starts with a uniquely floral and crisp aroma atop the familiar bourbon opulence, like a bouquet of flowers arranged in whiskey oak. The sip comes through with a full, robust body, and up front there are decadent notes of caramel and vanilla; but, dancing in the back come hints of jasmine from the rice and sake yeast!

It has a lean quality, probably from the rice, and there’s a characteristic kōji floral-fruity quality. But barrel-aged stouts are not really amenable to such delicate flavors, and this ultimately ends up being a another booze bomb.
