A Note on This Beer

A Meerts is similar to a Lambic, born from spontaneous fermentation. But, the supremely sippable Meerts stands out because it’s lighter in body and a little less carbonated, with fresh, complex flavors that merge citrus and funk.

This Midwest blendery makes a lot of different takes on the style, but today’s Meerts is the one that launched them all. It starts with a base of Pilsner Malt, raw wheat, and Saaz Hops for a cleanly smooth body mingled with earthy spice. Meerts is then fermented in French oak foeders with wild yeast prior to bottle conditioning.
You’ll find a delicate balance between lemon tartness and rustic earthiness dancing within each golden yellow sip. A whisper of oak adds complexity, but still allows the brew to maintain its easygoing effervescence.
But, you’ll have to grab it quick. Funk Factory focuses entirely on Wild and Sour styles, and they keep their batches small, for precision. Only very lucky Midwesterners usually get a taste.
