A Note on This Beer
Nestled within the little borough of Pennington, New Jersey, lies the brewery that puts the “wild” in Wild Ales.
With the patience of saints, The Referend Bier Blendery fully allows nature to take its course. They 100% spontaneously ferment all of their beers without the addition of any yeast cultures, and mature them in neutral oak barrels. Every Ale is unpasteurized, unsweetened, and deliciously unfiltered.
As a result, you can taste the lush countryside of the Garden State in every sip of Mont Sainte-Victoire — along with the invigorating flavors of freshly squeezed lemons and a hint of barnyard funk.
It’s a beautiful blend of spring and fall-brewed Saisons, crafted with New Jersey wheat, buckwheat, rye, and oats, and aged in oak for 8 to 24 months.
The result is a refreshingly tart and sophisticated brew that @Greg R. calls a “vibrant pastoral punch, a Saison to be savoured.”
The crisp, effervescent flavors of peaches, apricots, and lemons dance across the palate, finishing bone dry and intriguingly funky.
There’s no wrong way to enjoy this Saison: you can sip it on its own, pair it with a special dinner, or cellar it for later! But, before you think about HOW to drink it, you may want to think about how to score one of our mere 120 bottles.
The Referend recommends chilling Mont Sainte-Victoire for 24 hours before enjoying. It's also cellarable for up to 10 years!
