After 2 years of bottle conditioning, the Brett character in Anchorage’s oak-fermented Mosaic Saison has ripened to peak dusted lemon dryness. This is Brett flavor in its purest form and it’s ready to enjoy right now.
From the first whiff of musky, oak-tinged lemon peel, you know you’re in for a funkified experience. On the palate, it’s a brisk surge of woody spice, hay, and horse blanket. Echoes of dried orange and bitter citrus zest from Mosaic Hops reverberate in the background, amplifying the Brett profile. While complex, its lively carbonation sits light on the tongue. There’s something mystical about the way the flavors evaporate with such swift dryness.
