Even the brewers describe this beer as “the best of our best!”
To make it, they comb through their cellar, tasting their barrel stock and setting aside the very best for extended aging. This version is an extremely limited batch blended from St. Aubin White Burgundy Barrels and Missouri White Oak, with the youngest beer in the mix dating from 2020.
Tasting Notes
Let a sip roll across your taste buds, and you’ll pick up notes of vinous plum and snappy white grape. Hints of slightly funky lemongrass mingle with nuances of fresh hay and woody oak, then cascade into subtle flavors of pear and melon, tempering the mildly acidic body.
