A Note on This Beer
“I have a dream as a brewer to stop. Not because I am finished, but because I brew something so good I cannot do it again.” –Yvan De Baets
Today’s Saison combines the skills of a master brewery and a master brewer with the GABF Gold medal-winners at Perennial and the world-famous Belgian-style brewmaster, Yvan De Baets!
As the owner and operator of Brasserie De la Senne, De Baets has been at the forefront of crafting a “new wave” of brews in traditional styles. His Brussels location is one of only three real breweries based in the city, where he oversees the innovation first hand! In today’s combined effort with Perennial, the team crafted a quenchably acidic, melon-heavy Saison with a spin on a traditional spelt focused recipe.
To create a more nuanced brew, the team dry hopped the base with Huell Melon, adding a grassy note on the nose that blends the Farmhouse qualities of a Saison with the dank and hoppy aromas. The blend of sweetness, funkiness, and refreshing crushability makes this a delectable combination of old and new.
There’s quite a lot of praise for this dreamy drink, too. @Nate calls it, “A beaut. A perfectly balanced saison that keeps the glass in your hand until it’s empty. Little sweet, a little bitter, a lot delicious.”
When two brewing forces of Perennial’s and Baet’s magnitude combine, what else could one expect?
This beer was the second in a series of 10 to celebrate Perennial’s 10th anniversary!
