A Note on This Beer
“Soie” is French for “silk.” Which is beyond appropriate, because this colossal 17.1% ABV Old Ale from The Bruery goes down shockingly smooth. Ooh là là!
The last time we got our hands on a few bottles — way back in 2020 — you all rated it 4.37 on Tavour, calling it “smoooooth,” “warm, bourbony goodness,” and “Old Ale perfection!”
To craft this dangerously sippable behemoth, the brewers combined Solera-style blending with bourbon barrel aging, creating intricate layers of complex flavor. And after five years in The Bruery’s cellar, it’s smoother, richer, and more intricate than ever before.
Delectable notes of toffee and creamy vanilla mingle with jammy dark fruit and oak character. That big ABV is there, but it’s a pleasant warmth that slowly embraces the taste buds with every sip.
