Anchorage carefully develops Tide and its Takers Wild Ale through three separate fermentations. A primary fermentation in French oak foudres* with a Belgian yeast invokes buttery oak complexity. Next, it’s transferred and aged in French oak Chardonnay barrels with Brettonamyces, which only heightens the beer’s oaky complexity. The final fermentation takes place in the bottle where natural carbonation creates a smooth mouthfeel, clear fruit accents and bright yeast flavors.
Tide and Takers’s Brett-forward nose highlights apple skins, white wine, a bit of dusty earth and juicy pear. Slight carbonation allows the flavors to pour over the palate uninterrupted with oakiness, guava, grape-like tartness and honey-bread sweetness.
