A Note on This Beer
Today’s brand-new citrusy collab, Toon Dip, has me so excited, I’m practically seeing stars!
Sure, the Who Framed Roger Rabbit reference has my inner movie buff giddy. But what’s even more thrilling than a romp around Toontown is the fact that Drekker teamed up with Fair State Brewing Cooperative to create a Double Dry-Hopped AND ‘Dip Hopped’ IPA!
If you’ve never heard of Dip Hopping, that’s because it’s an extremely new technique from Japan.
Brewers add the hops after the liquid wort has cooled, but before yeast is introduced for fermentation. By coaxing out the hops’ flavors prior to fermentation instead of during it, this process keeps their more bitter notes at bay and allows the yeast’s flavors to shine through.
For Toon Dip, Drekker and Fair State used Mosaic, Citra, and El Dorado Hops. You get extreme layers of orange and grapefruit citrus with this one, rounded out with bursts of tropical fruit dankness.
And with the Kveik yeast fermentation unhampered by hoppy bitterness, you also get complementary tangerine and pineapple flavors. It’s so juicy, you’ll barely notice the 9.2% ABV!
