Even Drekker’s luxurious Barrel-Aged Imperial Stout What Lies Beneath (2020) — aged for an entire year in a mix of Buffalo Trace and Heaven Hills Bourbon Barrels!
To start, the US Open Beer Championship award-winning brewers filled an entire Knob Creek Bourbon Barrel full of ooey-gooey maple syrup, and let it age for 9 whole months.
The result is a maple syrup so velvety-soft, sweet n’ oaky that locals high-tail it to the taproom just to snag bottles of the leftovers.
The brewers used the lion’s share of that sticky sweet delicacy to brew What Lies Beneath. Alongside it, they added hearty heaps of rich cacao nibs, locally-sourced coffee beans (roasted for this Stout specifically), and “stupid amounts” of real Indonesian vanilla beans!
The barrel-aging experts at Drekker delicately conjure flavors of sweet bourbon, oak, dark cacao, and earthy maple with each decadently thick taste. Subtle notes of new leather, rich vanilla, and roasty, dark coffee float in the background, as the aromas of dried figs and caramel beg you to indulge in another silky-smooth sip.
With the way Midwesterners covet this maple syrup Dark Beer, it’s a miracle we managed to score 240 bottles! Although, we do wish we had enough to share with every Barrel-Aged brew fan.
