Ecliptic Brewing’s fruity Sour expertise shines with UltraViolet Blackberry Sour, a Tavour favorite summertime staple for its vigorous blackberry character. Now this infusion of fresh Oregon blackberries and Belgian yeast is getting the barrel treatment in two distinct versions: wine and whiskey.
With barrel-aging, Ecliptic is taking UltraViolet to even fruitier and boozier levels, highlighting the brew with nuanced notes of dark fruit and spice.
Syrah Barrel-Aged UltraViolet bursts with Sangria-like fruitiness and vinous dark fruit. Aging UltraViolet in Syrah barrels for 9 months brings tart blueberry notes to a mouthful of juicy blackberries and lemony Sour notes. Oak and grape skin tannins bring a crisp mouthfeel to this 9.5% boozy body. A touch of peppery notes rise in the finish.
Rye Barrel-Aged UltraViolet has an aroma of caramelized peaches, tumbling into richly tart blackberries soothed by a hint of vanilla from the rye. With 10 months of barrel-aging, this 10% ABV UltraViolet sips like a berry whiskey smash – a perfect summer cocktail with a tart berry and boozy caramel bite.
