The celebrated Seattle team started with a blend of wheat-based, mixed-culture beers aged first in oak, then transferred to bourbon barrels, where the melange steeped on fresh, Washington-grown peaches. Finally, the crew refermented the brew in the bottle with Brettanomyces, giving it an extra dash of earthy funk.
