A Note on This Beer
When it comes to today’s tart, funky, fruited masterpiece, the blending experts at Elder Pine used just about every trick they have up their sleeves.
Within the Twilight is a blend of two different Wild Ales, fermented with various strains of brewer’s yeast, lactobacillus, and brettanomyces for a brew that’s pleasantly funky. They allowed the mix to age in red wine barrels for a year, imbuing it with a tannic tartness.
Finally, the brewers added a massive amount of boysenberries — a sweet-tart fruit that looks and tastes like a raspberry and blackberry’s lovechild — and re-fermented the brew until no sugar remained. What’s left is a dry yet jammy explosion of berry flavors that has craft fans like @John P calling it “just phenomenal!”
