Seattle’s Rooftop Brewing is near and dear to Tavour’s heart. They were one of the first breweries to build a tight-knit relationship with us, and they welcomed us in to celebrate milestones with them like taping their first barrel aged beer “nail pull.” Stargazer IPA is their flagship. In it they use five different hop varieties balanced by roasted Victory Malt. It’s much darker than your average IPA, and because of this, the brewery says it “begs to be enjoyed under a clear night sky” — while perched on a rooftop perhaps? Locals know Rooftop best for their niche brews, including Scotch, Scotch, Scotchity Scotch Ale, Hoppin’ Honey Braggot, and Ladro Sul Tetto Pale Ale made with locally famous Ladro coffee.
