A Note on This Beer
They say don’t mess with Texas, but when it comes to Jester King’s All-Texas Spon — I think you’ll want to mess!
VinePair gushes about how the brewery “brings the term ‘Farmhouse Ales’ to life with its estate-grown and locally sourced ingredients and commitment to mixed-fermentation and wild yeast.”
And that commitment is on full display in every bottle of this Wild Ale.
The crew crafted it with west Texas-grown barley and wheat malted at Blacklands Malts, Hill Country well water, and ambient native yeasts. And for this funky sipper, they ALSO used whole cone Cascade Hops grown by a local homebrewer and aged in JK’s own barn! After coolshipping the wort, they aged it all in oak barrels for about two years.
Anticipate a complex bouquet of mixed citrus, barnyard nuances, and oak. Bright hints of lemon zest and hay define the front of the sip, with a balanced, earthy, horse blanket funk further along. Woody nuances and delicate florals twinkle alongside it all, making for a fascinating brew that’ll be delightful on a warm evening outdoors or when you’re lingering over a meal.
To quote VinePair again, “if you haven’t tasted one of Jester King’s oak-aged, spontaneously fermented and secondary-bottle-fermented beers, you haven’t lived your best beer-loving life.”
