A Note on This Beer
Jester King fans have waited over five years for today’s beer.
Ever since 2014, when the brewers released Hibernal Dichotomous — a “biere de coupage” or beer blend:
- 63% young Farmhouse Ale
- 25% mature Barrel-Aged Farmhouse Ale with lavender, rosemary, and mint
- 12% fresh-pressed juice from Texas watermelons
The brew was a hit! Fans like @Will T. raved, “One of the all-time greats… Seriously need to make it again!”
Well, Will, now Jester King finally has! After years of releasing different variants of Hibernal Dichotomous, the brewery has gone back to the original recipe.
Though this time around, they’re calling this unique brew Bug Farm.
To ensure the sippably clean texture brimming with florals and whispers of barnyard funk that made the original a favorite, the brewers allowed the brew to bottle condition on Brettanomyces for a year before its limited release.
“As of today, Bug Farm is presenting beautifully,” the brewers say. “The color from the watermelon has faded, but the flavor is delightful, and we believe it's a fitting tribute to its forbearer!”
And, while maybe you didn’t wait five years like those craft fans in Texas, it’d be a shame to pass this one up. After all, Jester King is Craft Beer & Brewing readers’ #1 Favorite Sour or Wild Ale Brewer in the World!
*Few names have as much recognition in American craft as Jester King— one of Thrillist’s 13 Essential American Breweries — though their beers only rarely step outside Texas!
