A Note on This Beer

The brewers at Jester King use timeless techniques to create one-of-a-kind, exquisitely balanced Farmhouse Ales “tied to a time, place, and a people.”

And, for today’s Detritivore (Batch 7), they draw inspiration from Cantillon’s legendary process of refermenting cherries to achieve a delicate, restrained fruit character. The result is a dry, mildly funky Farmhouse Ale that earns a 4+ UT rating every time it’s released. 

From the native yeast and cultures of surrounding Texas Hill Country to the aged hops matured on the farm, Detritivore’s ingredients embody the terroir of Jester King’s sprawling brewery estate.

Heaps of spent cherries from their highly-rated Sour, Montmorency vs. Balaton, impart an intricate cherry flavor that doesn’t overwhelm its subtly tart mixed culture base. And, on top of their deeply complex flavor, they lend a gorgeously ruby-gold pour.

All in all, Detritivore is a masterfully executed example of Belgian-inspired Farmhouse Ale. Any fan of the style would be remiss not to experience its nuances. But, fair warning, we’ve only got 35 cases of this year’s vintage to go around!

Jester knows it’s business. Not your typical straight farmhouse style Saison. Balanced well with juice and surprisingly crushable.

Definitely not a saison. This was more of a sour. Typically, I'm no fan of sours but it was surprisingly tolerable.
