A Note on This Beer
The reason we love Odd Breed Wild Ales? Everything they make is unexpected.
Take Elusive Illusion, for example. It’s a dry-hopped, oak-aged Wild IPA — a style that’s incredibly rare to find in the craft world today.
To make this funky, citrusy sipper, the brewers combined Pilsner malt, wheat, and flaked oats with Cascade, Simcoe, Citra, and Mosaic Hops. Then, they fermented the beer in stainless steel with house mixed cultures before aging it in French oak barrels for 16 months! Lastly, the brewers dry-hopped the aged beer with a final round of whole-leaf Cascade, Citra, and Mosaic Hops, imbuing it with flavors of mango, nectarine, and blueberry.
This hopped-up enigma astounds the taste buds. Odd Breed’s founder, Matt Manthe, describes Elusive Illusion as “a beer that maximizes clean, tropical and citrus hop flavor with Brett funk, light-moderate acidity, French oak tannins, and otherworldly complexity.” We say he hit the nail right on the head!
