A Note on This Beer
Sauce Magazine describes White Rooster as “a tucked-away spot inside a tiny Illinois town, named after a pet rooster and inspired by an ironically named farm party.” They also praise this crew for turning out fantastically innovative beer!
It’s a brewery where high-brow experimentation meets a refreshing, ‘everyman’ humility. The brewers even describe themselves as “just a bunch of construction workers that brew and serve their own beers!”
And, though they may be humble, they’re fastidious in their beer brewing, constantly churning out exceptionally interesting, complex, barrel-fermented Farmhouse Ales that take real attention to detail and brewing prowess, like delicate Saisons and Sours.
Today’s barrel-fermented Sour, Infusion, is a gleaming example of their constant dabbling and experimentation. Infusion is packed with both sweet cherries, and more pucker-inducing Montmorency cherries and black limes — dried limes that impart a bright, citrus zing but with added hints of earthy smokiness.
Combined with an easy-sipping 5.25% ABV, this Sour Ale tastes like light, crisp cherry juice with a fresh lime-peel garnish. And, the barrel fermentation lends a deep, tangy complexity that rivals any hoity-toity cocktail in intricacy.
Would you expect anything less from a group of craft-obsessed construction workers?
*We only have 28 cases of this amazing Sour!
