White Rooster Farmhouse Brewery has something special going on. Less than a year after opening their taproom, they have a 4.22 overall score on Untappd out of more than 4,000 ratings! Locals and Saison-seeking travelers alike gush over their collection of small-batch, meticulously crafted Farmhouse Ales.
Case in point: Lieu Et Heure, their first barrel-aged, barrel-fermented, blended Saison already earns a 4.47 Untappd rating. A complex, honed-in, tart-funky sipping experience, you’d think White Rooster has been in the business for decades.

- 5-month-old Saison - The younger vintage contributes a hay-like funky character accentuated by wisps of lemon pepper. Wheaty, grainy qualities begin to develop hints of tartness while aging in conjunction with White Rooster’s house yeast strain.
- 9-month-old Saison - An additional 4 months in barrels delivers a more pronounced lactic tartness as the wild yeast character emerges to the forefront. A kick of sour lemon meringue merges with a subtle woody spice, delivering just the right amount of depth that doesn’t overpower the Saison’s dry, delicate nature.
