All of The Ale Apothecary’s brews are hand-crafted in a simple barn, deep in the mountains above Bend, Oregon. Sahalie Wild Ale captures all the flavors of that wild country. To indulge in this brew from The Ale Apothecary is to reach a new level of Wild Ale fandom. Mention in public that you have a bottle stashed away, and people you’ve never met will ask you where you got it.

Tasting Notes

The brightly effervescent brew begins with a subtly resinous aroma from a month of dry-hopping with Goschie Farms Cascade Hops, before giving way to subtly nuanced layers of fruit. Hints of citrus, apricot, and pineapple mingle with oakiness from aging in wine and brandy barrels. On the finish, herbaceous nuances of pine mingle with mature bretty funk and bold acidity from local, wild yeasts.

375 ml corked and crowned bottle from Tavour. Bottled on July 23, 2021. Pours a cloudy, amber orange color. Small, creamy beige head. Aromas of oak, funk, yeast, citrus and white grapes. First sip is tart and funky. Notes of white wine, earthy malt, lemon rind, oak, apricots, vinegar and sour apple.
