About This Brewery
Paul Arney’s The Ale Apothecary is one of the most inventive spontaneous fermentation breweries we’ve come across. It’s also among the most unique and the most consistently well-rated.
The brewery creates Wild Ale works of art, even using the wood of a 14-foot spruce tree from their own property as a mash tun. Capturing wild terroir is one thing, brewing in it is a different adventure all-together!
Best known for Sahalie American Wild Ale, El Cuatro American Wild Ale, and The Beer Formerly Known as La Tache American Wild Ale — beer geeks lucky enough to find them in bottleshops will pay ‘wine prices’ for them, and their trade value is triple that!
The Ale Apothecary has also dipped their toes into uncarbonated, wine-like Still Beer.
Using their own innovative brewing process which melds the ancient art of brewing with traditions of wine & champagne production, the brewery continues to be at the forefront of beer-wine hybrids in the Pacific Northwest beer scene!
