About This Beer

Inspired by Finnish Sahti, one of the oldest types of Farmhouse Ales in the entire world, the crew uses a Scandinavian lauter tun known as a Kuurna made from a 200-year-old Engelmann spruce tree felled on their own Oregon farm to separate the grain from the wort. Plus, they age the brew in Pinot Noir barrels for over a year and bottle condition it on wildflower honey. 


Tasting Notes

On the sip, resinous coniferous notes meld with funky farmhouse nuances and a spritely tang that livens the palate. Subtle ribbons of natural honey sweetness accentuate the rich complexity, and just a kiss of vinous oak lingers after an effervescent finish.

Wow! Great sour almost tart Cherry but balanced well with some funk and smooth texture. Just a hint of resin. This is exceptional and glad I got some of the other offerings. Can’t wait for another drop.

Super complex. Sour and acidic with a mild resinous, oily end and a weird, spice-tyoe quality that needs it all together. This is wonderful.

Sahti is a Finnish type of farmhouse ale made from malted n unmalted grains including barley and rye... Traditionally the beer is flavored with juniper instead of hops..."sahati" is the Ale Apothecaries version of that and "SAHATI" is in many ways the very definition of where complex flavors arrive from the very methods used for production…the result is the process impacts the flavor profile at least as much as the ingredients themselves. I will, however, confirm that this was an absolutely impeccable introduction to a whole knew chapter of beer legacy for this humble connoisseur!👍🍻💓 Happy birthday to me! I highly recommend you make your drink a craft of the highest quality!

Farmhouse backbone is almost crushed by the evergreen forest explosion. Piney, vegetal, woody...a bit like chewing on pine needles. Mad points for incredible expression of an otherwise subtle flavor, but it's a bit of a turn-off after the first sip.
