About This Beer
The tiny crew at The Ale Apothecary worked their Wild Ale magic to create this one. They started with a batch of their Minotaur Ale, an already complex and funky brew made with blackberries. Then they blended it with a second spontaneously fermented beer that they crafted solely for this purpose. After aging the blend in wine barrels, they naturally carbonated it by bottle conditioning with a touch of cherry juice.
Tasting Notes
The final product is deeply complex, with multifaceted flavors of stone fruit, bramble berry, lemongrass, and hayloft funk. As the finish settles in, the brew takes a turn towards dark fruit, with nuances of date and plum. A touch of woodiness balances the bright tangy brew as the flavors fade into hints of vanilla.

Wish I cellared this for a while to let the flavors develop more. Tart with hints of blackberry and honey, but a bit overwhelming vinegar acidity. Mellowed out as it warmed a bit.

the aging takes this to 11. wild ale tart enough to grab your attention with every sip. Wood undercurrents on very prominent wild ale. I’m left wondering how 5 years in bottle would evolve this.

Ale Apothecary never disappoints but this one is special. The color is beautiful from the wine barrels but so complex and after an extra year in bottle is almost perfect. Tavour please get more of this!
