To create it, the brewers fermented this brew in oak foudres with wild yeast to crank up the tartness and create waves of gently puckering acidity. Texas-grown wheat and barley lend the brew a biscuity character that balances notes of lemony tang and wild funk, while the 5.2% ABV keeps it crushable all day long.
