A Note on This Beer
Before we get into all the weird stuff going on in today’s Snorkel Rustic Farmhouse Ale Batch #8, rest assured, it is freakin’ tasty. Fans on Untappd are calling it “Phenomenal” and “very refreshing.”

Now, here’s the weird part: it’s made with alderwood smoked sea salt and OYSTER MUSHROOMS!
If there’s any brewery to trust with a mushroom beer, it’s Texas’ Jester King. These guys were instrumental in creating the American Wild Ale style and are still one of the best at mastering it. Craft Beer and Brewing even named them One of the Top 5 Small Breweries in the World!
For today's brew, they used gourmet Oyster Mushrooms from nearby Fallen Oak farms, grown on Jester King's own spent grain.
How cool is that?
They make the beer, use the spent grain to grow mushrooms, and then put the mushrooms back into the beer! It’s the Circle of Life! Except, instead of a bunch of singing lions, you end up with today’s Snörkel Farmhouse Ale, which is obviously way better.
Pour this brew into a glass and prepare to be inundated with aromas of lemon-lime, bretty funk, and tangy tartness — everything you’d expect from a world class Farmhouse Ale. But, there’s something else, too: an earthy quality, an umami character. That’s the mushrooms.
Take a sip and all those Saison-like flavors are elevated by a bright salinity. It’s light, crisp, and incredibly drinkable. There’s still that underlying earthiness that’s difficult to define, but impossible to stop savoring.
