One cold night in February 2019, a coolship full of unfermented beer sat in the Texan vineyard of Southold Farm + Cellar overnight to collect ambient yeast out of thin air.
The next morning, the brewers reclaimed the beer, took it to a barrel cellar, and left it to spontaneously ferment and mature in oak for two years.
Finally bottled and naturally conditioned, this unique taste of Texas Hill Country terroir is ready for drinking, at long last!
