About This Beer
The JK crew modeled this beer after the traditional Gueuze-style Ales of Belgium, combining beers from 2020, 2019, and 2018 to create a rich and complex tapestry that’s bound to delight any Wild Ale fan!
All three beers in this blend started with Jester King’s own well water, Texas malted barley, raw wheat, and hops aged in the barn on their sprawling farm. After brewing, they naturally inoculated the wort with wild yeast from the open air, then left it to ferment in oak barrels for months.
When everything tasted just right, they blended it all together and bottled conditioned it.
Tasting Notes
Every sip is bright, tangy, and intricately nuanced, with notes of lemon grass, fresh hay, and a touch of wild funk. Hints of oak and vanilla dance in the periphery, leading to a finish that’s simultaneously tart and dry, almost recalling a glass of crisp white wine.
