About This Beer
Way back in 2018, Jester King partnered with their friends at The Veil to craft this special SPON, reminiscent of a classic Lambic.
After they created a traditional wort of well water, malted barley, raw wheat, and aged hops, the skilled teams added hundreds of pounds of Texas wildflower honey — providing a satisfying sweetness that rounds out the fresh baked bread notes. Then, they spontaneously fermented it, allowing the Texas terroir to give the brew complex, funky sips.
Tasting Notes
Like a traditional Lambic with a hint of farmhouse funk, these sips are tangy, complex, and oh-so-satisfying. There’s a hint of honey sweetness on the nose, washed with bright flavors of malt and an almost citrusy brightness on the finish.

they really knocked it out of the park on this one. aged for a while in my cupboard, it mellowed and has honey and berry/floral tones
